A number of French cheeses are traditionally done in a heart shape. the Coeur de Bourgogne (Heart of Burgundy) is a triple-cream cow’s-milk cheese that’s soft with a white rind. Coeur de Berry, a zingy goat’s-milk cheese, comes from the Berry region, the, ahem, heart of France. Coeur de Bray is a Neufchatel cow’s-milk cheese, white of rind, gold of soft, creamy interior. Heart-shape cheeses can be found wherever there’s a good selection of cheese.
